Awaken The Hunter
Experience the essence of the hunt in our signature four-day course, which offers a holistic approach to learning the entire process from planning and prep to stalking and hunting to field dressing and butchering a large animal. This process is a slow, thoughtful immersion to establish the strongest bonds possible to the land and our ecosystem, at which point hunting becomes more an act of giving and receiving than of conquering and taking. Awaken and hone the senses that arise during the hunt.
Advanced Field to Table
Having the confidence to deal with an animal after the kill in the field is critical to feeling comfortable taking the shot. The Awaken the Hunter course offers a hands-on overview of this process and this course hones those skills and goes into more depth on how to manage the process after the shot. Additional topics will be covered to help prepare you for fall season and you will take home a cooler full of cut and wrapped meat.
Wild Turkey Hunt
An intimate introduction to turkey hunting and a personalized base camp. Start with an optional hands-on course to get ready for the field and spend several days hunting wild turkeys (with daily guidance and strategizing). Practice reading maps, finding potential hunting spots on public and private lands, and comparing notes with us after each hunt over home-cooked meals prepared on site. Leave with the knowledge and confidence to plan and execute future outings on your own, and a deeper connection to the land and our food.
Shellfish Forage and a feast
Clams and oysters (bivalves) are considered a superfood with their high levels of vitamins and minerals. These nutrient-rich mollusks are also a vital part of our ecosystem with their efficient filter feeding. Join us for a one-day course in Hood Canal to learn where and how to find hard-shell clams and oysters and how to prepare them. We will have a shellfish feast right on the beach, prepared by a professional chef.

Plant Foraging & Survival Essentials
Explore the gastronomic richness of Northeastern Washington's flora, in the context of stone-age subsistence and survival skills. Prepare the staples of an ancestral diet, with wild ingredients, integrating survival skills like friction fire, stone tools, fibercraft, basketry and shelter building.
Rabbit Processing and Hide Tanning
This hands-on course will guide participants through the experience of respectfully taking the life of a rabbit and then skinning, processing, tanning the hide, and cooking the meat.
